A gastropub is a bar or pub that takes its food as seriously as its drinks — typically serving elevated pub food made with quality ingredients: hand-pressed burgers, house-made charcuterie, craft sauces, seasonal sides, and a thoughtfully curated beer and cocktail list. The term originated in London in the 1990s. Good gastropubs feel casual and welcoming (you can wear jeans) but the food would be at home in a proper restaurant.
The holy trinity of bar food: chicken wings (Buffalo, dry-rub, or glazed), loaded nachos (chips, queso, jalapeños, sour cream, guac), and pub-style burgers with thick-cut fries. After those: mozzarella sticks, onion rings, soft pretzels with beer cheese, sliders, loaded potato skins, jalapeño poppers, and flatbreads. Great bar food is engineered to pair with beer — salty, fatty, and finger-friendly.
Bar food tends to be American — wings, nachos, fries, burgers, and sliders. Pub food has British or Irish roots — fish and chips, shepherd's pie, bangers and mash, ploughman's lunch, and steak pies. Both overlap significantly in the US, where an Irish pub might also serve excellent wings. The distinction matters more in Europe; in America, the terms are often used interchangeably.
